R&I Fund- Structuring financing operation to develop long shelf life bakery products

Technical assistance in structuring the financing operation for Vallefiorita SRL aimed at developing long shelf life yeast products through the use of biopreservation technologies, through the Research & Innovation Fund. The activity involved the analysis of the counterparty, the technical verification of the financing conditions, and the analysis of the economic and financial sustainability of the transaction and the counterparty, also under different scenarios. Particular attention was given to the development of a risk matrix aimed at understanding the contractual structuring of the project as well as understanding the main variables impacting sustainability.
